Easy Spicy Shrips

Fresh and flavorful! Few words are needed to express how tasty this dish is. One can serve it as is or over noodles/zoodles. Also you can substituted red pepper flakes for the chili to distribute the heat and let the shrimp marinate in the dressing before sauteeing the shrimp.

Recipe: Time 15 minutes Serves 8-10

Ingredients

  • 3 tbsp peanut oil
  • 2 garlic cloves, very thinly sliced
  • 1 chile pepper, very thinly sliced into rings*
  • 1 lb Shrimp, peeled and deveined, tails left intact
  • 3 tbsp lemon juice, freshly squeezed
  • kosher salt and black pepper, to taste
  • 2 green onions, white and light green parts only, very thinly sliced
  • 2 tbsp flat leaf parsley, roughly chopped
  • 1 tbsp lemon zest
  • crusty bread, for serving

Directions

Heat oil in a large nonstick skillet over high heat until very hot. Add garlic and chile pepper and, stirring frequently, toast until fragrant and the garlic is light golden brown in color, about 30 seconds. Add shrimp and lemon juice and season with salt and pepper, to taste. Cook until shrimp are opaque, 2-4 minutes, depending on the size of the shrimp. Remove pan from heat and stir in green onions, parsley and lemon zest. Serve shrimp in shallow dishes with crusty bread on the side for dipping in the pan juices.
