This meatloaf is not your ordinary meatloaf. It is loaded with veggies like carrots, bell peppers, onions and carrots, mixed with ground pork and ground sirloin and topped with a mushroom gravy and caramelized onions. Serve with mashed potatoes and your favorite vegetables or salad
The Cheesecake Factory Meatloaf

Ingredients
- 1 T. vegetable oil
- 2 T. minced green bell pepper
- 2 T. minced red bell pepper
- ½ c. minced red onion
- 1⁄3 c. shredded carrot
- 5 t. minced garlic
- 3 eggs, beaten
- 1½ lb. ground sirloin
- 1 lb. ground pork
- 1 T. minced Italian parsley
- 1 T. granulated sugar
- 2 t. salt
- 1½ t. dried thyme
- 1 t. ground black pepper
- 1 t. dried oregano
- 1 t. ground sage
- ½ t. paprika
- ¾ c. whole milk
- ¾ c. bread crumbs
Grilled onions:
- 1 medium onion, sliced
- 2 T. butter
- ¼ t. salt
- ¼ t. ground black pepper
Mushroom gravy:
- 2 T. butter
- 1 t. minced garlic
- 2 T. all-pupose fl our
- 1- 14 oz. can beef broth
- 1½ c. sliced mushrooms
- 1 t. minced Italian parsley
- ¼ t. salt
- ¼ t. ground black pepper
- ¼ t. dried thyme
- ¼ t. ground sage
Directions
- Preheat oven to 350 degrees.
- Heat up 1 tablespoon oil in a medium sauté pan over medium/low heat. Slowly sauté the green and red bell pepper in the oil for 5 minutes. Add the minced onion, carrot, and garlic and cook for an additional 5 minutes, till just softened.
- Beat eggs in a large bowl. Add ground beef, pork, sautéed vegetables, and remaining ingredients except bread crumbs. Mix well with hands until everything is combined, then work in the bread crumbs a little bit at a time. Press meatloaf into a 9 x 5-inch loaf pan and bake for 1 hour.
- Remove meatloaf from the oven and cool for 30 minutes. Let it rest, do not cut.
- As meatloaf rests, make grilled onions by melting butter in a
medium sauté pan over medium/low heat. Add onions, salt,
and pepper and cook for 20 – 25 minutes, stirring often, until
onions are light brown. - Make gravy by melting butter over medium/low heat. Add garlic and sauté for 1 minute. Whisk in flour and cook for 2 to 3 minutes, until mixture begins to turn light brown. Add remaining ingredients and simmer for 10 to 15 minutes, until sauce is thick.
- Preheat broiler to high. Remove meatloaf from the loaf pan and slice it into nine 1 inch thick slices. Arrange slices to be served on a baking sheet and place under the broiler for 2 to 3 minutes, until hot. Place slices of meatloaf on serving plate, spoon gravy over the meatloaf, and then top with grilled onions.
