In this article, we’ll bite into a savory Sausage, Egg & Cheese Breakfast Hand Pie with a biscuits and a warm scrambled egg filling accentuated with Cheddar cheese.

Making Hand Pie Filling

The filling is Basic Breakfast. Fry up some breakfast sausage over medium heat. Crumble it with a wooden spatula as it cooks. Beat some eggs with a little milk. When the sausage starts to brown, add the egg mixture to the pan. Scramble up the eggs just until they begin to set. They should be ever-so-slightly under-done. They’ll get a chance to finish off in the oven.

Assemble & Bake Hand Pies

Assembling hand pies is actually quite fun. Flatten a refrigerator biscuit (I used Pillsbury Buttermilk Biscuits) into a circle about 3 1/2 inches wide. Sprinkle some cheese in the middle and dollop on a heaping Tablespoon of filling.( sausage and egg)
Gather the edges of the dough around the filling and pinch closed.
Put the balls into a greased pie pan with the seams on the bottom. Brush the tops with a beaten egg
Bake for 16 to 20 minutes until golden brown. This recipe only makes 10 pizza balls which is perfect for an after school snack but when I am making these for more people, I use a 9×13 inch pan instead. I just follow the same recipe and increase the baking time a bit.

Sausage Egg Cheese Pocket

Ingredients

  • 10 refrigerator biscuits
  • 8 ounces breakfast sausage
  • 5 large eggs
  • 3 Tablespoons milk
  • salt and pepper – to taste
  • 1/2 cup shredded cheddar cheese
  • 1 additional egg – beaten

The Filling

  1. In a large frying pan over medium high heat, cook and crumble the breakfast sausage.
  2. In a medium bowl, beat the eggs with the milk.
  3. Drain off any excess grease from the sausage. Pour in the egg mixture and stir and scramble until egg is almost completely set, but still quite moist. Season to taste.

Assemble

  1. Preheat oven to 425 degrees. Cut a slit in the top of each pie with a sharp knife so steam can escape.
  2. Bake for 16 to 20 minutes until golden brown. Let cool 5 minutes before eating.
