Base of cake: (for 8 tartlets)
- 5 oz. flour
- 3 oz. butter
- 2 oz. powdered sugar
- 1 egg yolk
- 1 tablespoon of cold milk
- 2 lemons
- 2 eggs
- 4 oz. icing sugar
- 2 oz. butter
To the base of cake: Mix all the ingredients in the mixer or by hand.
Roll out the dough and place in small tarts, prick the base with a fork and bake 12-14 minutes at 180 º. Booked and unmold when completely cool (if your hot unmold it, will be broken)
For the Lemon-Curd:
First grate the lemons (yellow part only) second: get the juice (of those lemons). Put the juice in a bowl along with the eggs and sugar, mix. Boil over medium heat, stirring until it begins to thicken (being careful not to boil).
And cast aside the butter into small pieces and mix.
Allow to cool and took it to the refrigerator to completely cool before filling the tarts.
