Jalapeno Popper Dip

One of my favorite bar foods has to be jalapeno poppers.

A jalapeno pepper, stuffed with cheese, and either deep fried, or baked, lends itself to be packed full of flavor. Granted it has been awhile since I have bellied up at a bar to enjoy a beer, a jalapeno popper appetizer, and a game, but the thought of these morsels has not escaped me.

Ingredients
For 5 or 6 jalapenos

  • 2 eggs
  • 1 cup flour
  • 2 cups bread crumbs
  • 2 cups cheese (you choose the one you like, I’ve used parmesan)
  • Haceite for frying

To remove the spicy jalapenos:

  • 4 cups water
  • 2 tablespoons instant coffee

Directions:
Rinse jalapenos. To clean gloves. Remove all the seeds. see image.

Remove the spicy jalapeno:
Heat 4 cups of water with 2 tablespoons of instant coffee. Bring to a boil and turn off heat. Place the jalapenos for 5 minutes in the coffee. Drain and let dry thoroughly.2 Stuff them with cheese, they have to be well filled.

Going through the seasons:

With a fork make the jalapeno stripes (see picture)

And follow these steps: flour, egg, breadcrumbs, egg and breadcrumbs.
Wrap them in foil and refrigerate for 1 hour.

After an hour Fry the jalapenos.

Caramelized tomato sauce:
In a skillet place a sliced ??tomato (skinned and seeded) with three tablespoons of sugar and the juice of half a lemon. mix, cover and cook over low heat for 15 minutes. Mix and serve. (You can add 1/4 cup of water to make the sauce more liquid)
