Ingredients

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 cup whole milk, room temperature
  • 1 teaspoon vanilla extract
  • 4 egg whites, room temperature
  • 1/4 teaspoon pure almond extract

Whipped vanilla buttercream

  • 3 cups confectioners’ sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons whipping cream

  1. Preheat oven to 350°. Prepare 9 in round pan with baking spray or butter and flour( your choose).
    In large bowl add butter softened and beat at medium speed with a hand-held mixer until creamy, about 2-3 minutes.
  2. Gradually add the sugar, and beat until fluffy
  3. In another bowl add milk and extract, stir together
  4. in a third bowl, sift flour and baking powder.
  5. Carefully add to butter mixture alternately with milk mixture, beginning and ending with flour mixture.
  6. Beat at low speed just until blended after each addition.
  7. Beat egg whites at medium speed until stiff peaks form; gently fold into batter.
  8. Pour batter into prepared 9 in round pan.
    Bake at 350° for 35-38 minutes or until a wooden pick inserted in center comes out clean.
  9. Cool in pan on wire rack for 10 minutes.

Whipped vanilla buttercream

  1. In a standing mixer fitted with a whisk, mix together sugar and butter.
  2. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
  3. Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
