Tartlet Jam Filled Cookies
Had long wanted to do this type of cookies / biscuits. The truth is that they are delicious and very easy to make. What more could you want? I’ve made them with strawberry jam and raspberry jam.Surely with other flavors are delicious!

Ingredients:
1/2 cup butter
1/2 cup sugar
1 egg, beaten
1/2 tsp pure vanilla extract
2 1/2 cups all purpose flour
1/4 tsp salt
powdered sugar
Directions:
Beat butter and sugar in a small, deep bowl until fluffy, 3 to 4 minutes. Add the beaten egg and vanilla; beat again. Sift the flour, add salt, and combine with wet mixture. The dough should be stiff enough to roll out so if you need to, add more flour one tablespoon at a time. Lightly flour work surface and roll dough out to about 1/4 of an inch thickness. Using a 3 to 3 1/2 inch cookie cutter, cut out 18 cookies, gather and reroll the dough if need be. Using a 1 inch cookie cutter, cut centers out of 9 of the cookie shapes.
Bake on a parchment paper lined cookie sheet at 375 degrees for 8 to 10 minutes. Remove from oven, transfer to wire rack, and let cool.
Spread each full cookie with a small amount of jam, being careful not to go all the way to the edges. Continue until all cookies are done. Sift icing sugar over cookies with holes, then place on top of jam filled cookies.
