Ingredients:

  • 2 tortillas flour (can be the same size or image of different sizes
  • 1/2 cup ketchup
  • 1/3 cup chopped onion
  • 1/3 cup red pepper
  • 1 chopped garlic
  • 1/3 sliced champions
  • 12 cup spinach
  • 1/2 cup cheddar cheese
  • salt and pepper
  • Olive Oil Cooking Spray

Steps:

  1. Preheat oven to 400F
  2. In a pan, spray with oil and cook the peppers, onion and champions. When this tender (approximately 4 minutes) add the chopped garlic and remove from heat. and reserve
  3. Spray Oil a baking tray.
    Place a tortilla on the pan, add tomato sauce stewed vegetables (onion, pepper, and garlic champions) salt and pepper
  4. Put on this spinach and cover with another tortilla.
  5. Add to cheese and bake until golden and bubbly cheese. about 15 minutes
