Blueberry and Raspberry Homemade Popsicles
My son loves popsicles (and who am I kidding, I do, too!) but I would much rather serve him a homemade popsicle made with real fruit than the typical sugary store-bought popsicle. Making popsicles is easier than you think and it allows you to control the amount of sugar in them. You can by inexpensive popsicle molds at most stores in their special summer section or you can use smaller paper cups and lollipop or popsicle sticks.
Makes about 20 popsicles
Ingredients
- 1 cup raspberries
- 1 cup blueberries
- 1 cup strawberry
- 1 can light coconut milk
- 1 cups water
- 1 cup apple juice
- 1/2 cup honey
Also:
- 5 ounce Dixie cups
- 20-30 Popsicle sticks
Directions
Add raspberries, blueberries, strawberry, coconut milk, water, apple juice and honey in a blender. Carefully pour mixture into your 5 ounce Dixie cups, filling 2/3 of the way.
Place in the freezer for 30 minutes (set your timer), insert your wooden sticks, and continue to freeze until the popsicles are completely frozen, about 6 hours.
