These tasty little bites are one of my favorite appetizers.
I happened to stumble upon the recipe on Pinterest and have been hooked ever since. My spinach and cheese bite addiction is to the point where I made these for every family function and friend gathering during the entire holiday season.
For 12 – 15 bites
Ingredients
- -16 Oz. package of frozen chopped spinach
- -4 Oz cream cheese
- -2 eggs
- -2 Tbsp parmesan cheese,
- -salt and pepper to taste
- -1 / 2 teaspoon baking powder
- -4-Tbsp flour
- – Oil for frying
In a bowl place the eggs, Parmesan, salt, pepper, flour, baking powder and mix well.
Add the spinach.
Heat the oil over medium heat.
When hot, put the mixture with a spoon. Cook for 4 minutes give or until golden.
Tip: If we want to make it healthier, replace the whole egg with egg whites (3 egg whites). and flour for 1 cup of seasoned Italian breadcrumbs (gluten free) make balls and bake at 375F for 25 minutes, turning the patties after the first 15 minutes.
