  • Salt and freshly ground black pepper to taste
  • 1/4 tsp smoked paprika optional, for a smoky twist

Instructions

  • Chop Fresh Ingredients: Finely chop the parsley, garlic, and oregano. If using a food processor, pulse gently to avoid over-processing.
  • Mix Together: Combine all the ingredients in a mixing bowl: parsley, garlic, oregano, olive oil, red wine vinegar, lemon juice (if using), chili flakes, paprika, salt, and pepper.
  • Adjust Consistency: Stir well to ensure the flavors meld. If the sauce feels too thick, add a touch more olive oil or vinegar.
  • Rest for Flavor: Let the chimichurri rest for at least 30 minutes to allow the flavors to develop fully.
  • Store Properly: Transfer to an airtight container and refrigerate for up to 1 week. Bring to room temperature before serving.
