Equipment

  • Large skillet
  • Baking pan
  • Meat mallet or rolling pin (for flattening chicken)
  • Whisk
  • Measuring cups and spoons
  • Garlic press or knife (for mincing garlic)
  • Tongs

Ingredients

  • 4 boneless skinless chicken breasts
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 5 tablespoons olive oil divided
  • 1 cup mozzarella cheese shredded
  • For the Sauce:
  • 2 tablespoons olive oil
  • 8 oz white mushrooms freshly sliced
  • 3 cups Madeira wine almost a full bottle
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tablespoons cornstarch dissolved in 2 tablespoons beef broth
  • 1 tablespoon salted butter
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Prepare the Chicken:
  • Flatten the chicken breasts to an even 1/4-inch thickness using a meat mallet. Season both sides of the chicken with kosher salt and black pepper.
  • Cook the Chicken:
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Once hot, add the chicken breasts without overcrowding the pan. Cook each side for 3-4 minutes until golden brown and fully cooked. Transfer the chicken to a baking pan and cover to keep warm.
  • Make the Sauce:
  • Using the same skillet (without washing), heat 2 tablespoons olive oil over medium heat. Add the sliced mushrooms and sauté for 1-2 minutes.
  • Add the garlic, Madeira wine, beef broth, cornstarch mixture, butter, and black pepper. Stir to combine and bring to a boil.
  • Reduce the heat to a simmer and cook for about 20 minutes, stirring occasionally, until the sauce is reduced by one-fourth and thickened to a dark brown consistency. Transfer the sauce to a container and keep warm.
  • Broil the Chicken:
  • Sprinkle the shredded mozzarella cheese evenly over the chicken breasts on the baking pan. Broil for 3-4 minutes, or until the cheese is melted and lightly golden. Watch carefully to prevent burning.
  • Serve:
  • Plate the chicken and generously drizzle with the Madeira mushroom sauce. Serve immediately with your favorite sides like mashed potatoes, rice, or pasta.

Notes

  • Tips for Perfect Chicken Madeira
    Flatten the Chicken Evenly:
  • Ensuring all chicken breasts are the same thickness helps them cook evenly, preventing dry or undercooked sections.
    Don't Overcrowd the Pan:
  • Cook the chicken in batches if necessary to get an even sear on each piece.
    Reduce the Sauce Properly:
  • The sauce should simmer until thickened and reduced by one-fourth for a rich, concentrated flavor.
    Cheese Perfection:
  • Watch the chicken carefully while broiling to avoid burning the cheese. A light golden color is ideal.
    Pairing Suggestions:
  • Serve with mashed potatoes, angel hair pasta, or rice to soak up the delicious sauce. A crisp Caesar salad also pairs wonderfully.
    Madeira Wine Substitute:
  • If you can't find Madeira wine, Marsala wine can be used as a substitute for a slightly different but equally delicious flavor.
Create a restaurant-worthy experience at home with this Chicken Madeira Recipe. Its rich flavors and elegant presentation will impress your family and guests every time!
