Preheat and Prepare
Preheat your oven to 350°F (175°C). Coat your 9x13-inch baking dish with non-stick spray to prevent sticking. In a small bowl, mix together the ½ cup sugar and 2 tablespoons cinnamon to create your cinnamon sugar mixture, and set aside.
Prepare the Cheesecake Filling
In a large mixing bowl, beat the cream cheese until smooth using a hand or stand mixer. Add the sugar, egg, and vanilla extract, and continue beating until the mixture is creamy and well combined. Set the cheesecake filling aside.
Assemble the Bottom Layer
Sprinkle half of the cinnamon sugar mixture evenly over the greased baking dish. Carefully unroll one can of crescent dough and place it over the cinnamon sugar, trimming the edges if necessary to fit perfectly.
Add the Cheesecake Layer
Spread the prepared cheesecake filling evenly over the crescent dough layer using a spatula. Smooth the top for an even layer.
Add the Top Layer
Unroll the second can of crescent dough, trim the edges if needed, and carefully lay it over the cheesecake filling. Sprinkle the remaining cinnamon sugar evenly over the top layer.
Bake
Bake the assembled dessert in the preheated oven for 30-35 minutes, or until the top layer is golden brown and slightly puffed. Let the bars cool in the pan for at least 30 minutes before slicing.
