Ingredients

  • For the Flautas:
  • 1 tablespoon olive oil or avocado oil
  • ½ yellow onion chopped
  • 1 jalapeño seeded and minced
  • 3 cups shredded chicken rotisserie works great!
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 4 oz mild green chiles
  • 1 tablespoon fresh lime juice
  • 3 cups shredded cheddar or Mexican blend cheese
  • 12 flour tortillas
  • For the Toppings:
  • Shredded lettuce
  • Pico de Gallo
  • Salsa
  • Guacamole
  • Sour cream
  • Chopped green onion
  • Crumbled queso fresco

Instructions

  • Oven-Baked Flautas:
  • Preheat the Oven: Set your oven to 425°F. Place a wire rack on a rimmed baking sheet and coat with nonstick spray.
  • Prepare the Filling: Heat oil in a skillet over medium-high heat. Sauté onion and jalapeño for about 4 minutes or until softened.
  • In a large mixing bowl, combine the cooked onion and jalapeño with shredded chicken, cumin, chili powder, salt, garlic powder, paprika, green chiles, lime juice, and cheese. Mix well.
  • Roll the Flautas: Warm tortillas in the microwave for 30 seconds to make them pliable. Place 3 tablespoons of filling on the bottom third of each tortilla, roll tightly, and place seam side down on the prepared rack.
  • Bake: Spray the flautas generously with cooking oil. Bake for 18–23 minutes or until golden brown and crisp. For extra crunch, broil briefly, but keep a close eye on them!
  • Frying Method:
  • Heat the Oil: Fill a large pot with canola or vegetable oil to about 2 inches deep. Heat to 375°F.
  • Fry the Flautas: Using tongs, place the flautas seam side down in the oil. Fry for about 2 minutes, flipping once, until golden brown. Fry in batches of 4 to avoid crowding.
  • Drain and Serve: Remove the flautas and place them on a plate lined with paper towels. Sprinkle lightly with salt.
  • Air Fryer Method:
  • Preheat the Air Fryer: Set your air fryer to 400°F.
  • Cook the Flautas: Spray or brush the flautas with oil. Place them seam side down in the air fryer basket, ensuring they don’t touch. Cook for 7–8 minutes, flipping halfway, until golden and crispy.

Notes

🌟 Tips for Success 🌟

  • Smaller Tortillas: If using smaller tortillas, reduce the filling to ensure proper rolling and crisping. 🌯👌
  • Keep Them Warm: Place cooked flautas on a baking sheet in a 200°F oven to keep them warm before serving. 🔥
  • Extra Crispy: For an added crunch, broil baked flautas for 1–2 minutes, but watch closely to avoid burning. 🔥🥰
  • Use Tongs: When frying or air-frying, use tongs to handle the flautas safely and maintain their shape. ✨🍴

Topping Ideas

Top your flautas with shredded lettuce, pico de gallo, salsa, guacamole, sour cream, green onions, or crumbled queso fresco for a burst of flavor and texture. 🌮🥑✨
