Oven-Baked Flautas:
Preheat the Oven: Set your oven to 425°F. Place a wire rack on a rimmed baking sheet and coat with nonstick spray.
Prepare the Filling: Heat oil in a skillet over medium-high heat. Sauté onion and jalapeño for about 4 minutes or until softened.
In a large mixing bowl, combine the cooked onion and jalapeño with shredded chicken, cumin, chili powder, salt, garlic powder, paprika, green chiles, lime juice, and cheese. Mix well.
Roll the Flautas: Warm tortillas in the microwave for 30 seconds to make them pliable. Place 3 tablespoons of filling on the bottom third of each tortilla, roll tightly, and place seam side down on the prepared rack.
Bake: Spray the flautas generously with cooking oil. Bake for 18–23 minutes or until golden brown and crisp. For extra crunch, broil briefly, but keep a close eye on them!
Frying Method:
Heat the Oil: Fill a large pot with canola or vegetable oil to about 2 inches deep. Heat to 375°F.
Fry the Flautas: Using tongs, place the flautas seam side down in the oil. Fry for about 2 minutes, flipping once, until golden brown. Fry in batches of 4 to avoid crowding.
Drain and Serve: Remove the flautas and place them on a plate lined with paper towels. Sprinkle lightly with salt.
Air Fryer Method:
Preheat the Air Fryer: Set your air fryer to 400°F.
Cook the Flautas: Spray or brush the flautas with oil. Place them seam side down in the air fryer basket, ensuring they don’t touch. Cook for 7–8 minutes, flipping halfway, until golden and crispy.
