Equipment

  • Large skillet
  • Wooden spoon or spatula
  • Measuring spoons
  • Airtight container (for leftovers)

Ingredients

  • 1 pound 90/10 ground beef
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 2 teaspoons garlic powder
  • 15 ounces velveeta cheese cubed
  • 1 10-ounce can Rotel tomatoes
  • For Serving:
  • Minced fresh cilantro
  • Sliced green onions
  • Diced tomatoes
  • Corn tortilla chips

Instructions

  • Brown the Beef
  • Heat a large skillet over medium-high. Add the ground beef and break it up with a wooden spoon. Cook until browned, about 8–10 minutes.
  • Season
  • Stir in the chili powder, onion powder, and garlic powder. Mix well so the beef is evenly coated with seasoning.
  • Add Cheese and Tomatoes
  • Lower the heat to medium. Toss in the cubed velveeta cheese and the can of Rotel tomatoes. Stir regularly to help the cheese melt smoothly.
  • Finish Cooking
  • Continue stirring until the cheese is fully melted and the dip has a creamy consistency, about 5 more minutes.
  • Garnish and Serve
  • Top with cilantro, green onions, and diced tomatoes, if desired. Present immediately alongside tortilla chips for dipping.
  • Storage and Reheating
  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days. To reheat, place the dip back in a skillet over low heat, stirring until warmed and the cheese has remelted.

Notes

Tips

  • Control the Spice: Adjust the chili powder to your preferred heat level, or add diced jalapeños for extra kick.
  • Prevent Burning: Stir frequently to avoid scorching the cheese at the bottom of the skillet.
  • Consistency Fix: If the dip becomes too thick, stir in a splash of milk or broth.

Variations

  1. Ground Turkey Swap: Replace the beef with ground turkey for a lighter version.
  2. Extra Veggies: Fold in diced bell peppers or onions for more texture and flavor.
  3. Cheesy Mix: Mix half velveeta and half shredded cheddar to change the flavor profile.
