Yummy layers of your favorite taco fillings baked on top of a Bisquick base to make little taco pies.

I really wanted to make these Taco Cupcakes but I didn’t have any wonton wrappers on hand. I stared into my cupboard and saw some Bisquick mix and thought it would be a perfect crust for what would eventually turn into these Mini Taco Pies.

Mini Taco Pie

Just mix a little Bisquick with water until you have the consistency of pizza dough and press it into the bottom and sides of your muffin tins.

The beauty of these is that you can really layer anything you want here depending on what you have lying around. You definitely want to start with taco meat for your classic taco flavor but from there you have a blank canvas to build whatever you want.

I luckily found some black beans in my pantry but you could even add some refried beans or crushed tortilla strips here.

Layer ingredients for mini taco pies

Melt some cheese on top because cheese makes everything taste better. Once the pies have baked, everyone can get involved.

Taco pies ready to eat

Make a taco bar with diced tomatoes, sour cream, cilantro, salsa, and crushed chips as toppings and have everyone build their own customized Mini Taco Pie. Try to eat just one!
